You may have noticed that when we were putting our Body Wise menu plan together, my great friend Shelli came up with the brilliant format of 2/2/2. Each week in your menu there are 2 days with meat recipes, 2 days with fish or seafood, and 2 days with vegetarian recipes. And we aren’t alone. Bill Clinton has gone completely vegetarian and from Oprah to Gwenyth, people are embracing a movement called Meatless Monday. If you can’t bring yourself to go vegetarian (and no, my house is not although I personally eat meat rarely) then embracing one day a week of legume based meal options (think bootcamp refresher!) is a GREAT place to start.
What’s for dinner?
My favourites are chilli, lentil curry, and Indian eggplant with chickpeas or lentils. MMMMM!
