I have a few blissful days to myself. What to do?! Well for starters…..

Every summer I indulge in eating vegan foods that make my husband go hmmm. But this week? Well, he’s fishing, and I’m free to eat as I please. After dropping off my children at summer camp last night, I did a quick clean up of the house and promptly roasted 3 red peppers, a zuchinni, 2 vine ripe tomatoes, a head of cauliflower, a whole red onion and a bulb of garlic. Dinner was a lively mug full of sweet bean salad, followed by a 1/2 cup of quinoa, and warm roasted veggies.
This morning I slept in and when I woke…there was silence, and even a little sunshine coming through my window. Breakfast was fresh fruit and a small handful of almonds, a quick look through a favourite cook book (I think soup for dinner: split pea and roasted red pepper), and a lazy look at the day’s news with a cup of David’s Tea and agave nectar.
Today I plan to spend the day writing. And cooking yummy food. And maybe I’ll do some yoga tonight.
And just to make sure I keep everything in perspective, here is a picture I smiled at this morning because it reminded me that a few days of solitude are nice, but the truly great moments in life are shared…
